Today I’m sharing a full day of eats for WIAW. You can read what it’s all about right here!

I feel like Mondays are always a great fresh start for new changes, and lately I’ve been really feeling the need to clean up my diet a bit. I don’t mean to imply that my current diet is “dirty” or whatever, I am just making an effort to improve my mood and energy levels by eating a lot more fruits and veggies. I’m also trying to cut back on snacking and processed foods.

I got my day off on the right foot with a treadmill run, and then breakfast was black coffee and a giant bowl of berries with some organic vanilla yogurt.

Lunch was the most amazing sushi burrito at Greenfish. I’ve been wanting to try a “sushirito” for so long. To be honest it wasn’t really that much different than a regular spicy tuna roll but it was still really tasty.

Dinner was ready in 2 minutes thanks to my Sunday meal prep. Pesto chicken, roasted veggies, and puréed cauliflower.

Weekend Recap: The best cauliflower recipe + how I lost my car keys.

I hope you all had a great weekend. Mine was pretty lowkey, which is usually how I like it.

I started my Friday off right with a Starbucks breakfast of champions. I’m obsessed with the cinnamon almondmilk macchiato.

A friend and I attempted to visit an Irish restaurant for lunch to celebrate St. Patty’s, but everywhere we went was smash packed, so we ended up at ABV Social – not Irish, but their steak salad hit the spot. We also split one of their soft pretzels and beer cheese – sorta Irish, right?

I visited Trader Joes after work to stock up on some much needed produce.

Dinner was simple but delicious – pan seared salmon, chopped spinach, and truffle pureed cauliflower. I get asked a lot about this cauliflower, so here is the recipe (it’s so easy).

Truffle Pureed Cauliflower


1 large head of caulifower 2 cups chicken broth 4 cloves of garlic 4-6 oz cream cheese 2 tsp truffle oil (optional)


In a large covered pot, steam the cauliflower with the chicken broth and garlic cloves for about 20 minutes, or until soft. Place the cauliflower and garlic cloves (not the broth) in a food processor and pulse a few times. Add in 4 ounces of the cream cheese and puree until smooth. Add an additional 2 ounces of cream cheese if desired. Drizzle in the truffle oil as you pulse and add salt and pepper to taste.

Then it was bubble bath time with my favorite bath salts. I’m not actually sure if they help with my soreness but they sure do smell nice. 

Banjo doesn’t know how he feels about the bubble situation. 

Saturday morning I made myself some coffee and breakfast – scrambled eggs/egg whites with spinach, sundried tomato chicken sausage, and strawberries.

Then it was off to my first day volunteering at the local cat shelter. I did my orientation the week before so I was really excited to get started! I’m a total cat person and just love having the opportunity to give love and attention to so many of these precious little bebes.

Grabbed a green juice at Whole Foods on the way home. I can’t remember what all went into this, but they added cayenne and I really liked the little kick.

I found a new (to me) running/biking trail near my apartment and I was so excited it was finally “warm” enough to try it out. And by warm I mean 35 degrees. I left all my stuff in my car and pocketed my car key like I always do, but when I got to the end of my run, I reached into my pocket and – NO KEY. 

I didn’t panic at first because I figured it would be easy to find on the paved trail. But after I retraced my steps 3 times, I finally gave up and called my cousin to come get me. Thankfully there was a spare car key at my dad’s house (although it was kind of an ordeal finding a key to get in there, since mine was locked in the car and he’s in Cali). I’m glad it all worked out but I don’t think I’ll be back to that trail any time soon. On the bright side, I got a killer run in with the key searching. 😉

Definitely needed a cappuccino to warm up after being stuck outside for so long.

By the time I got home I was too hungry to make anything so I heated up an Amy’s frozen entree and wolfed it down in about 3 seconds.

Then my cousin and I went to see Beauty and the Beast. It was really cute! And surprisingly true to the original. I also loved last year’s Cinderella so it’s safe to say I’m on board with these Disney reboots. I really want them to do Pocahontas next. Although I guess they kinda did that already with Avatar…

Dinner was some turkey meatballs, followed by the best nightcap.

Sunday morning brunch with a friend at Fuzzy’s. I had an egg white veggie omelet and it was delicious. 

I spent the rest of my Sunday rewatching Game of Thrones while cleaning up and doing some meal prep for the week. I’m going to make an effort to have healthy meals more easily accessible during the week. I actually found all this cooking very relaxing.

I made roasted zucchini, squash, and tomatoes, baked pesto chicken tenders, and some more cauliflower.

Mizunos + the best way to eat cupcakes

My Thursday morning started off with taking my car in for some repairs. What I thought was just some cosmetic damage (someone hit me in a parking lot) has turned into a much bigger ordeal and my poor baby Honda is going to in the shop for at least a couple weeks. Luckily my dad is living in Santa Barbara for the winter/spring and so I was able to borrow his car for the time being. Thanks dad!

Breakfast was some blueberries at my desk. Along with my usual cottage cheese and coffee of course. 🙂

For lunch we had pizza to celebrate our office’s 18 year anniversary. Who can turn down free pizza? I had a couple slices along with a salad from our cafeteria.

Someone brought in an obscene amount of Gigi’s cupcakes for the office to share. These are my absolute favorite cupcakes in the world and I couldn’t decide on a flavor. The trick is to find someone to split some with you so you can sample the different options. 🙂

I’ve been really struggling with getting out of bed for morning workouts. I’m not really sure why because I get plenty of sleep, but I think a lot of it is this freezing cold weather we’ve been having (12F today). It makes it extra difficult to leave my warm cozy bed! But I suppose it doesn’t really matter when we run as long as we are able to get it in, right?

I headed to the gym after work and did my run on the treadmill with my new Mizunos. I used Asics all through high school but since then I’ve been a Brooks girl. I love my Brooks Adrenalines but I thought it might not hurt to try another brand for comparison to figure out my best fit.

I met up with my cousin for some dinner after the gym. We split the chicken and waffles at Artisan 179 and a couple glasses of vino.

We also had a little bit too much fun with the snapchat.

What do you guys think? Should I get a septum piercing? 😉

Morning workouts + meal prep woes.

Finally got my butt out of bed for a morning run. I waaaaaay prefer running before work but it’s been rough getting back into that habit. I used to go to Orange Theory classes at 5 AM everyday and I have NO idea how I did that. Hopefully I can get this done a few more times so it can start to be come a habit again!

Banjo likes to hang out under me while I do my planks so that I can’t fail without crushing him. Dangerous game, buddy. Also, ignore my hair.

I’m totally geekin out over my new Skyrim calendar for my desk at work. I originally wanted the Game of Thrones one but 3/12 months featured people being brutally murdered so I went with my second choice to keep HR off my back.

Dinner was a healthy one – I’m trying to be better about cooking healthy meals during the week but I always go out and buy all this meat/fish/produce and then never feel like making any of it. I think the solution is to do some of that weekend meal prep you pinteresters are always talking about. Today I made baked parmesan tilapia, roasted asparagus, and some pureed cauliflower. It was pretty delicious if I do say so myself.

Also there was lots of leftovers so BOOM – meal prep for my weekend. I think I did that whole thing backwards but oh well.

Coloring books + free food + my new favorite shoes.


You know it’s gonna be a good day when it starts with a triple shot of espresso. 🙂 I tried the cinnamon almond milk macchiato at Starbucks and it was amazing. I spent the rest of the day feeling super overcaffeinated and awesome.

Lunch a bunch of randomness in the form of snacks which is my favorite form of anything. Those lil multigrain crackers from Trader Joes are deceptively delicious.


One of my coworkers has got us all into these adult coloring books so we have been having coloring sessions over the lunch hour. Like I needed any more reasons for people to think I am a child.


I finally got my eyebrows done after work – I go every month but by the last week they are always looking pretty crazy. I’m super envious of people with lighter eyebrows because having black eyebrows and pasty pasty skin is a real challenge. Plus I was cursed with the Egan caterpillar brows.

I got home, did a little cuddling with the Banjo, then did a quick 30 minute jog on the treadmill. Are these not the cutest shoes you’ve ever seen? They won’t be in regular rotation for running because I need shoes with more support, but I couldn’t resist using them this once. I think the’ll work great for strength days.


Dinner was a Panera veggie sandwich that was leftover from one of our vendor meetings at work (not pictured – my chips and cookie). Free food is my favorite food. Fun fact, one time I got to take home 2 full trays of catering from Cheesecake Factory after one of our corporate events. It was one of the best things that’s ever happened to me because my life is pretty dull.

Morning Snack

Carrots and hummus! I am loving these portion packs of hummus but am also a little depressed to learn that’s really how little hummus you get in a normal serving.



Lunch was a random hodgepodge of snack stuff, plus some turkey meatballs that didn’t make it into the picture.


After work I headed to a training session at a local cat shelter. I’m going to start volunteering there on weekends and I’m really looking forward to it! It’s a no kill shelter and I was so impressed and touched by the great care provided to all of these cats.  Hearing all the stories of how many of these little babies were abused or neglected was breaking my heart. It’s going to be a real struggle for me not to adopt every single cat at this place.


This little cutie was already spoken for or else he would’ve come home with me for sure. 🙂

I got home pretty late and didn’t feel much like cooking, so I just threw together a ham sandwich on an asiago bagel and then it was off to bed.

My favorite chopped salad.

I have a super embarrassingly easy recipe for you guys. This is my go-to salad that I make almost every other week because it’s just so good. I’m really not much of a salad person usually and typically only like it when it’s covered in ranch, but this doesn’t need any dressing at all in my opinion.

My Favorite Chopped Salad

  • Servings: 3-4
  • Time: 10 minutes
  • Difficulty: easy
  • Print


  • 12 oz baby spring mix, chopped
  • 1 medium cucumber, chopped
  • 1 cup grape tomatoes, halved
  • 1 can sliced mushrooms (or you can use fresh!)
  • 10 egg whites, chopped
  • 8 oz crumbled jalapeno feta (or just use regular!)
  • 1/3 cup sunflower seed kernels
  • salt and pepper to taste


Combine ingredients and enjoy! I find this salad tastes even better the next day, but if you’re not into that sorta thing then just make a smaller batch. 🙂
