WIAW 3.20.2017


Today I’m sharing a full day of eats for WIAW. You can read what it’s all about right here!

I feel like Mondays are always a great fresh start for new changes, and lately I’ve been really feeling the need to clean up my diet a bit. I don’t mean to imply that my current diet is “dirty” or whatever, I am just making an effort to improve my mood and energy levels by eating a lot more fruits and veggies. I’m also trying to cut back on snacking and processed foods.

I got my day off on the right foot with a treadmill run, and then breakfast was black coffee and a giant bowl of berries with some organic vanilla yogurt.

Lunch was the most amazing sushi burrito at Greenfish. I’ve been wanting to try a “sushirito” for so long. To be honest it wasn’t really that much different than a regular spicy tuna roll but it was still really tasty.

Dinner was ready in 2 minutes thanks to my Sunday meal prep. Pesto chicken, roasted veggies, and puréed cauliflower.

WIAW 03.07.2017

I had my usual coffee and cottage cheese at my desk.


Morning Snack

Carrots and hummus! I am loving these portion packs of hummus but am also a little depressed to learn that’s really how little hummus you get in a normal serving.



Lunch was a random hodgepodge of snack stuff, plus some turkey meatballs that didn’t make it into the picture.


After work I headed to a training session at a local cat shelter. I’m going to start volunteering there on weekends and I’m really looking forward to it! It’s a no kill shelter and I was so impressed and touched by the great care provided to all of these cats.  Hearing all the stories of how many of these little babies were abused or neglected was breaking my heart. It’s going to be a real struggle for me not to adopt every single cat at this place.


This little cutie was already spoken for or else he would’ve come home with me for sure. 🙂

I got home pretty late and didn’t feel much like cooking, so I just threw together a ham sandwich on an asiago bagel and then it was off to bed.

WIAW 02.28.17


Today I’m sharing a full day of eats (kinda like I do everyday, ha) for WIAW. You can read what it’s all about right here!


I got up bright and early for another C25K treadmill workout, followed by an ab circuit:

1 minute plank
30 basic crunches
30 russian twists
30 leg lifts
30 bicycle crunches (each side)
Repeat 3 times


Breakfast was my first “green” smoothie (the blackberries make it not very green anymore) in a looong time. I used to have them all the time but I got tired of them after a while. This one had half a banana, frozen mixed berries, spinach, vanilla protein powder (I like this kind), peanut butter, and cashew milk.


Lunch was this new to me frozen wonton soup from Trader Joes. I’ve never bought soup in a freezer section before but this was really good.


I always have have plenty of snacks on hand at work, which is why I have 2 mouse traps under my desk. True story. Don’t even get me started on the day they finally managed to catch lil Frank. Even though he had selfishly eaten and pooped all over my favorite rosemary almonds, I was still a little sad he had to go down like that. But anyway, today I had some raw almonds, pesto gouda, and an apple. Mouse poop free.


For dinner I made some turmeric cauliflower rice with Thai red curry coconut chicken. This was my first time trying cauliflower rice and I’m not completely sold on it. I sautéed it in olive oil but still found it pretty much tasted like raw cauliflower. Let me know if you have any tips for how to prepare it!

Then I headed off to a late evening Hot Pilates class. I’ve been to this studio for Bikram and Vinyasa but this was my first time trying the Pilates and I really liked it. I enjoy yoga for the mental benefits but I haven’t yet found it to be a particularly effective physical workout (I know it totally can be but I’m a beginner so my practice isn’t very acrobatic), but this felt more like barre which I love.


Ended the night with a lil treat and some kava tea. I will definitely be buying this cowboy bark again because I enjoy sweet n salty snacks and self-sabotage.

Getting Back in the Groove + Trader Joes Haul

It’s always bittersweet coming back from vacation, but overall I’m usually pretty happy to get back to my routine, and my cat.


This is my lil bebe Banjo, I know I’m biased but isn’t he the cutest??


Also, can we talk about this hoodie for a sec? It came in the mail while I was gone. I don’t have much to say about it other than I think it’s funny and other people do not. Which means it’s sort of perfect, right?

Anyhoo, getting back to the office was a bit of a struggle, but still kind of nice to have my schedule back. I’m a structure kind of gal.


I grabbed (and accidentally burned) a whole grain bagel leftover from a morning meeting as my emergency breakfast. I usually keep yogurt or cottage cheese in the fridge at work but I ran out before Vail and hadn’t been to the grocery store yet.


For lunch I hit up the grocery store salad bar. I usually don’t really like salads but I’ve been craving them after all the junk I had in Vail. This one had romaine, spring mix, cucumbers, carrots, sunflower seeds, chicken, and blue cheese dressing.


I also had a couple of caramel delite cookies for dessert. (Do you guys call these Caramel Delites or Samoas???) This was actually my first year ever buying Girl Scout cookies. I don’t know why I thought it would be a good idea to order 3 boxes of these things.


On my way home I did some much needed grocery shopping – check out this Trader Joes haul. I’m really excited to try the new mixed nut butter.


I snacked on some carrots and hummus while I put the groceries away. I love these carrot chips. They’re so good with hummus and have replaced my usual pretzels and crackers.


I really hate working out after work but I couldn’t get myself out of bed this morning so it had to be done. I continued my Couch to 5K program on the treadmill. I can’t wait until it starts to stay light out later than 6 so I can run outside more often.


Another reason I hate working out at night is it means I usually don’t have the time or energy to cook. I just want to shower and eat something easy. I heated myself a Sweet Earth vegan curry burrito – I found this brand at Target and they’re all really good! The breakfast one is the best.

Then I settled in to catch up on my shows for the night and do some reading.
